Eggs "Castilian style"
Boil the eggs for about 11 minutes, cool immediately with water and set to one side.
In a frying pan, fry the minced meat lightly with the onions, peas (previously cooked) and the diced ham.
Once it is all lightly fried add a little paprika, the corn flour and the tomato.
Cook for 12 minutes and set to one side.
Cut the eggs in half long ways, place on a dish and cover with the sauce. Decorate with some pepper and a finely chopped hard boiled egg.
200 g minced meat
150 g ham
100 g peas
1 teaspoon of paprika
1 teaspoon of corn flour
4 ripe tomatoes
